Kale Chips


Why had I not made these before? They were so easy—and so good. Perfect* with a bowl of garlic soup and a slice of whole wheat bread.

Ingredients

  • 1 bunch kale
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
  2. Remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale (a salad spinner is best, but paper towels will do). Drizzle kale with olive oil and sprinkle with salt.
  3. Bake until the edges brown but are not burnt, 10 to 15 minutes.

Makes about 4 servings

*and cheap—this whole meal amounted to $0.93 per portion!
