What I Ate Wednesday #74: Working for Vacation


Happy Wednesday, guys. Not only are we halfway through the week, it’s also the first What I Ate Wednesday of September.  As always, thanks to Jenn for hosting the weekly link party. To see more WIAW from other bloggers, visit Peas & Crayons.

This month’s theme is “fall into good habits.” Habits have definitely been on my mind recently, what with starting school again and get going with my last couple masters courses. It’s only been about nine months since I’ve been in a classroom, but it feels like a lot longer. I hope I remember how to study!

I’m starting to wish I’d taken a real vacation or scheduled more personal time or not worked so many weekends and the holiday so close together. This week I’m feeling a little burnt out and scatter-brained. For example, I showed up for class Tuesday night (after going into the hospital early to put in a full day to make up for leaving early), only to find out that class was not, in fact, starting until next week. Good one, Jess.

For those of you in the States, how was your Labor Day weekend? After enjoying a leisurely Saturday and Sunday, I actually worked Monday.I don’t know why the day was so exhausting, but by the time I got home, my body was just, like, “Dude.” Still, I did laundry and got some work done and then passed the f*** out around 9 pm. Yeah…

Here’s what I ate during my waking hours.

Breakfast: Greek yogurt with a banana & cereal, coffee  

Lunch & Snacks: I packed an arugula salad with roasted veggies, white beans and goat cheese; kettle corn & coffee for lunch “dessert”; grapes & dry-roasted edamame to keep me going throughout the day.  

Dinner: Rice, refried black beans (random craving), veggies, nutritional yeast, and avocado

Snack: smoothie/very soft-serve made with ~1/2 c unsweetened coconut milk, 1/2 frozen banana, ice, cocoa powder,  1/2 scoop vanilla protein powder, 1/4 tsp xanthan gum and topped with cocoa-PB2 sauce.

I’ve been trying to be a little more creative with my meals and snacks at home. Things can get a bit monotonous, so when I have the chance to experiment, I do. If all else fails, maybe that can be my good habit this month?

  1. That bean/avo/nooch dish sounds awesome. Yes, ugly, but I find a lot of my favorite meals tend to be unattractive. : )

    I didn’t do any traditional Labor Day stuff (no cookout, beach, etc.). Instead, I worked for a bit, then my partner and I decided to see “The Campaign.” Not because we thought it would be a “good” movie, but because we knew it would make us laugh. And it totally did. Will Ferrel cracks me up, every.time.
