So I know this has been floating around for a few days, but I’m a bit slow…While I was working on my portfolio yesterday, I came across this video and could not stop laughing. If going just by the music, though, my neighbors must have thought I was up to something far more exciting that writing about clinical competencies.
I think I also learned something about how to ice a cake. I kind of wonder, though, did he also bake it himself?

I came across this video yesterday and just had to share. I watched it 3 times in a row before heading to work yesterday. I’m sure it’ll put a smile right on your face!
As my classmate Helen puts it, this 1979 about our bodies’ needs is quite sophisticated for a cartoon. It’s also kind of awesome. This should be required viewing for, like, everybody. I wish I’d known about this when I was taking Proteins, Fats & Carbs last year.
So…I may not have TV, but I do have a new favorite method of screen time procrastination (thanks to Rachael of Rebel Grrrl Kitchen). My Drunk Kitchen is basically the funniest thing ever. I’ve been laughing out loud (okay, cackling) all weekend going through these. My neighbors must think I’m crazy, and I don’t care one bit.
This one may be my favorite: Raw Vegan Cheesecake.

I try not to get preachy when talking about nutrition, but when someone asks me what “healthy eating” is, I usually give this answer: Pretty much anyone can do themselves a favor by eating more vegetables and eating less added sugar.
Today we see sugar in all kinds of products—sodas and juice drinks, yes, but also in beverages like soymilk, in bread, salad dressing. Snack foods are also abundantly available and cheap. Portion sizes of carbohydrate-rich foods have also grown tremendously, making it even more difficult for consumers to control their sugar intake.
Personally, I believe that an occasional ice cream cone or piece of cake is perfectly fine. When you eat these foods, you actually feel like you ate something. The problem starts when people consume excess calories from foods that don’t make them feel full.
Excess calories are only the beginning of the ever-growing list of the negative effects of sugar. There is a lot of interesting information to found. Some of it’s alarmist BS with little basis in scientific evidence, and some of it is well-researched and clearly explained.
In this video, Sugar: The Bitter Truth, Dr. Robert Lustig, Professor of Clinical Pediatrics, in the Division of Endocrinology Director of the Weight Assessment for Teen and Child Health (WATCH) Program at UCSF, shows how added sugars in prepared foods (especially soft drinks) have contributed to the rising obesity rates over the past 30 years.
My friend Alex sent me this hilarious video from the Onion about fast food feedbags. Even though it’s a joke, when you take into consideration the emphasis on making fast food and convenience foods easy to eat, you can see the scary little grain of truth.

For my Food Management Theory course, we’ve been assigned several videos to watch online and write brief commentaries to bring to the first day of class.
I found this particular talk by Mark Bittman (love him) on the over-production and over-consumption of meat and junk food and its impact on our health and the environment especially thought-provoking.
What I like is that he implores the audience to cut back on meat rather than going full-blown vegetarian. He also calls the issue one of “global survival” rather than bringing morals into it. That’s a kool-aid I can drink.
Of animals, he says, “The time has come to stop raising them industrially and to stop eating them thoughtlessly” and that “there’s no way to treat animals well when you’re killing ten billion of them a year.”
No sh*t.
I was also very interested by his comments on the USDA and the food pyramid and the fact that many of its developers had/have ties to agrobusiness. In short: there’s a reason we’re not explicitly encouraged to eat a diet rich in plants and low in animal products and junk food…
